This easy Parmesan chicken recipe layers mayo, bread crumbs, and high heat to make it crispy on the outside, juicy on the inside.

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 cup seasoned Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground paprika
  • 1/3 cup mayonnaise (or 4 tablespoons melted butter)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large shallow bowl or plate, combine breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and paprika. Set aside.
  3. Slice each chicken breast in half lengthwise to create thin fillets.
  4. Place chicken between plastic wrap and pound to about 3/8-inch thickness.
  5. Brush both sides of chicken with mayonnaise.
  6. Dredge each piece in the breadcrumb mixture.
  7. Place on a baking sheet sprayed with cooking spray.
  8. Bake for 17-20 minutes or until cooked through and golden brown.

Notes

  • You can substitute garlic powder with 1 clove fresh minced garlic.
  • You can use regular breadcrumbs with 1 1/2 teaspoons Italian seasoning instead of Italian breadcrumbs.
